Explain the cooking process of a tradicional dished served in your city/town

Campello's kitchen


In my town there are two tradicional food.
The first is "fideua", the ingredients we need to do it are the following:





250  gr to thick noodles
200 gr to tuna or bluefish, cut into small pieces
100 gr to peeled prawn
1.5 kg to "morralla" ( a variety fishes to soup)
2 dried red peppers
2 tomatoes
2 peppers
1 olive oil glass
3 garlic heads
salt
saffron



For the preparation, the first is fry the dried red peppers in a pan with oil and crush with salt. We poach  the peppers, garlics and tomatoes. We add 2 liters of water and "morralla" with dried red peppers and saffron. We boil all during 30 minutes and we pour to get the soup. We boil the noodles in broth during 15 minutes and we add fish and peeled prawn. We cook for 5 more minutes.

The second tradicional food of my town is "caldero". The ingredients we need to do it are the following:


 

 

different types of fish (mere, hen fish...)
2 dried red peppers
1 garlic head
parsley
olive oil
salt
saffron







The elaboration is easy, in a big pot we fry dried red peppers and garlics, then we separate it, and we sting it with salt and parsley. In the same oil we fry the fish. Below we boil with a lot of water for 20 minutes. We add the dried red peppers, garlics and saffron. We strain the broth to make rice with it.
